This is one area where we are breaking with tradition. Forget about the crates, the new generation of milk-fed veal is raised on pasture. Our Jersey bull calves are raised outdoors where they get plenty of fresh air and sunshine, all the grass and hay they want to eat as well as twice-daily milk feedings. This produces a tender, pink veal meat chock full of nutrition.
